Winemaker's Notes:

Fermentation Both the Merlot and the Cabernet Sauvignon were fermented in upright stainless steel fermenters. The fermentation temperatures exceeded 90°F to maximize color and tannin extraction. Aging The Merlot matured for 12 months in 90% new American oak barrels. The Cabernet Sauvignon matured for 12 months in a combination of new and used French and American oak barrels.

The fl avors found in this wine are rich in currant, plum, cedar, and spice. Aging in small French and American oak barrels gives the wine a smooth, velvety texture with elegant tannins that are a superb match with many meals.
