Hawk Crest Cabernet Sauvignon California 2005
Winemaker's Notes:
The Winiarski family has produced Hawk Crest wines since 1974. Over the years, the winemaking team has carefully researched and selected specific vineyards in some of California's most promising growing areas from which to source fruit for these exciting wines. Hawk Crest winemaker Mark Smith draws on two distinct areas in California to craft this approachable yet well structured Cabernet Sauvignon. The climate and diverse soils of Paso Robles in California's Central Coast provide bright red berry fruit, while the high altitude and volcanic soils of the Red Hills district in Lake County give the wine structure and depth. Small percentages of Merlot, for texture and mouthfeel, and Petit Verdot, for mid-palate grip and intensity, were also added. The wine was aged for 12 months in French oak barrels for added complexity and polish. This wine makes an outstanding first impression with its vibrant ruby color and distinctive aromas of black cherry, spice, black pepper and tobacco. Silky tannins and dark cherry flavors stand out against a backdrop of spicy notes and hints of vanilla. Perfectly balanced with a soft entry, well-integrated oak and a long, rich finish, this Cabernet Sauvignon will pair well with roasted game, grilled meats and moderately rich sauces.

Add your reviewA nice affordable Cabernet that is really easy to drink. It felt a little tight as the wine went down, but a good value cab. I made a cab reduction sauce tonight with this wine and I will say it was one of the best reductions I've ever made!
This is one of hte best wines under $15-$20 out there. It's smooth, complex and incredibly easy to drink. It's a Bordeaux style wine so it's got a lot going on yet doesn't overwhelm with any one grape. Until you get afford a bottle of the Stag's Leap Fay, SLV or Cask 23, this is the next best thing.
This wine still has an alcoholic nose, but its aged a little. There's a lot of burnt earth, leather and dried lilac notes. Good fruit and the licorice on the finish has died down, although its still there.
Owned by Stags Leap Wine Cellars - same winemaker. Hot, chocolate and spice nose. Leathery and drying in the mouth, prunes and stewed fruit, but sadly its got that medicinal finish - was 2005 a hot year? Much of the fruit is overripe. The alcohol is over the top too - 13.8%. Damn, i had higher hopes...

A Cabernet Sauvignon wine from California in USA. 2005 Hawk Crest Cabernet Sauvignon 750ml

This dark and intense wine opens with concentrated aromas of red currant fruit that mingle with cocoa powder, and an earthy chaparral character that speaks of its volcanic mountain origin. Flavors of red currant, dark chocolate, and walnuts are entwined with restrained tannins that give way to a long vanilla oak finish.

Wine Tasting NotesBeautiful and inviting, this garnet wine beckons with rich aromas of vanilla, cedar, and plum. The palate is enveloped by the smooth and graceful structure, adorned with vanilla, Bing cherry, and black plum. The midpalate has a perfumed lift, and the finish lingers with a hint of cedar. Enjoy this wine with a wood-oven pizza topped with pancetta and black olives or a traditional beef stew with fall root vegetables.
