Winemaker's Notes:

Hand-harvested in early October with careful selection directly in the vineyard. Over 14 days, fermentation and maceration occurred in stainless steel tanks at 28°C using selected yeasts. Frequent aerations, pump-overs, and punch-downs were performed to optimize polyphenol extraction. Malolactic fermentation occurred. Aging took place in new French and American oak barrels for 12 months, followed by 1 month in stainless steel tanks to stabilize the wine. To preserve the wine’s integrity, it was bottled unfined and unfiltered. The bottles were cellared at a controlled temperature for a minimum of 5 years before being released.
